Ingredients:
4 medium sweet potatoes
2 tbsp. olive oil
1 teaspoon turmeric
1 teaspoon paprika
salt and pepper to taste
For the garlic yogurt:
200 g Greek yogurt
2 cloves of garlic, crushed
juice of 1/2 lemon
fresh dill or parsley for decoration
Preparation:
Preheat the oven to 200°C.
Wash the sweet potatoes and pat dry.
Cut each potato into 8 slices, without cutting all the way through so that they remain bound together.
In a bowl, mix the olive oil, turmeric, paprika, salt and pepper.
Spread the potatoes with the resulting mixture so that each slice is coated.
Place the potatoes on a baking tray and bake for 30-40 minutes, until they are soft and golden.
While the potatoes are baking, prepare the garlic yogurt: in a bowl, mix together the Greek yogurt, garlic, lemon juice, salt and pepper.
Serve baked sweet potatoes with garlic yogurt, sprinkled with fresh dill or parsley.
